Peanut Butter Oat Energy Bites

Looking for the perfect thing to grab on your way to that 6am workout or to fill a late afternoon hunger? Something filling and packed with protein but still ultra-delicious? Look no further!

These peanut butter granola energy bites are quick, easy, and get the belly-filling job done. Plus, you likely already have most of these ingredients in your pantry.

Here’s what you need:

  

  • 1 cup Oats
  • 2/3 cup unsweetened shredded coconut 
  • 1/2 cup creamy peanut butter
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/3 cup honey
  • 1T chia seeds
  • 1t vanilla extract
  • Parchment paper

Mix it all together in a large bowl. Using your hands, roll and form into small (about 1 inch) balls and place on a baking sheet covered in parchment paper. Refrigerate for 20-30 minutes, place in an air tight container and refrigerate for up to a week.

  
I ate two of these before a 45 minute early-morning cardio Pilates class and they were the perfect amount of fuel.
